Ahhhh…good ‘ol Dr Seuss!  Dr Seuss was truly before his time, and his books are littered with profound statements, ideas and concepts.  Some of my favourite quotes are from Dr Seuss:

Along with many many others!  When I was in Wellington last weekend I visited the Dr Seuss exhibition, and added to 3 titles to our Dr Seuss collection: “Did I Ever Tell You How Lucky You Are?”, “Oh the Thinks You Can Think!” and my favourite “Oh the Places You’ll Go”.  They have been read over and over this week, and are now packed for the plane.

This is a breakfast that my 3 year old simply calls “Sam”.  When she asked if she could have Sam for breakfast it took us a little while to click that this is what she was after.

It really pays to get good quality ham for this, the taste of a good ham is out of this world!  We got ours at Nosh, a bit of luxury for the weekend, and savoured every bite.

Serve with additional sautéed greens with garlic and mushrooms.

Green eggs and ham

Sam-I-Am (Green Eggs and Ham)

Serves 4-6

Ingredients:

  • 6 eggs
  • 1 cup spinach, silverbeet, kale or other leafy green
  • salt and pepper or Herbamare
  • coconut oil for cooking

Method:

  1. Break the eggs into a blender jug (preferably a high-speed blender), put the leafy greens and seasonings in and blend til smooth. If you do not have a high-speed blender you will still be able to see the greens, but this doesn’t affect the taste.
  2. Heat about 1T coconut oil in a small frypan.
  3. Tip your egg mixture into the pan and let it sit and cook from the bottom for 1-2 minutes first.  It will be foamy on top to start with, but don’t worry this does go as it cooks.
  4. After 1-2 minutes start folding the egg mixture with a spatula, from the outside to the centre of the pan.  Keep folding until just firmed up, then tip onto serving plates.  The heat inside will keep these cooking even once they have been removed from the pan.
  5. Serve with some good quality ham or bacon, extra greens and mushrooms.
