Lately Mr 6 has been very keen to make dinner on his own.  I figure some future wife will love if I nurture this, and in the meantime I get a great helper n the kitchen (with 4 kids, if I play my cards right and they each take on a cooking night, I will only be left with 3 nights a week to cook!).  Pizza, oven chips and salad is currently his ‘signature dish’,  he can make it with close to no support, and the pride when we eat that dinner is adorable.  He especially loves when we before we eat we give thanks to the person who made the meal.

This protein-boosted pizza sauce is full of flavour, so easy to make, and freezes well.  I only use half of this mix on a large chickpea pizza for our family of 6, and freeze the rest for next time.

Boosted pizza base sauce

Boosted Pizza Sauce

Ingredients:

  • 2 cloves garlic
  • 1 medium onion
  • 190g tomato paste
  • 1 1/2 cups cooked kidney beans (or a 400g tin, well rinsed)
  • 1 tsp mixed herbs
  • salt and pepper to taste

Method:

  1. Put the garlic and onion in a small food processor bowl and chop
  2. Add the rest of the ingredients and process til well combined and your preferred consistency

Leftovers freeze well.
